This adds such a deliciously crunchy and acidic bite to any dish.
PICKLED RED ONION
1 red onion
1 cup white vinegar (white distilled, white wine, rice – whichever you have)
1 tsp salt
1 tsp sugar
Cut onion in half lengthwise and slice thinly.
Mix everything together in a bowl and add enough cold water to completely cover onion.
Refrigerate 30 minutes to 1 hour and strain. This will keep, in an airtight container, in the fridge for about 1 month.
