There is no real recipe for these Shishito Peppers. I just guess how much I need for the number I am serving, get a pan with oil really hot, and throw the peppers in. Let them char a few minutes (2-3 minutes) before tossing. Then cook another 3-5 minutes, until nicely charred and just beginning to soften and wilt. Sprinkle with coarse or kosher salt, toss, and serve!
Eat these with your hands. Grab the stem and just bite the whole thing!
Shishito Peppers
Ingredients
½ lb shishito peppers
2 tbl safflower oil (or other veg oil)
coarse salt
Instructions
Heat up the oil in a large skillet until it is just about smoking.
Throw in the shishito peppers. To get them really charred, place a heavy cast iron pan on top of the peppers. Give them a toss after a minute or two and char the second side.
Immediately sprinkle with coarse salt and serve.
