Brining will be the end of dry chicken. I promise. I add this step ahead of any recipe, even a marinade. Try it and it will change your outlook on chicken forever.
Brining Tutorial
Serves:
Ingredients
½ cup salt
½ cup sugar
6 cups water
Preparation
Whisk everything together in a pot and bring to a boil. Allow to cool, combine with chicken in a bowl, and put in the fridge.
2-3 hours for chicken pieces (but any amount of time here will do)
6-8 hours for a whole chicken
overnight for a big turkey (think thanksgiving)
